🧾 Ingredients for 4 people:
- about 500 g of wild asparagus
- 4 fresh eggs
- 100 g of butter
- 100 g of grated Parmigiano Reggiano
- Salt to taste
👨🍳 Preparation step by step:
- Cleaning and boiling the asparagus:
Start by washing the wild asparagus thoroughly. Bring them to a boil in plenty of salted water and cook for about 15 minutes.
➤ If they taste too bitter, change the water and extend the boiling for a couple of minutes. - Sautéing in a pan:
Drain the asparagus and sauté them in a pan where you have melted a knob of butter. Let them flavor for a couple of minutes over medium heat. - Preparing the fried eggs:
In a non-stick pan, melt some butter and carefully crack the eggs, being careful not to break the yolks.
Cook them until the egg whites are set, leaving the yolk soft and creamy. - Plating the dish:
Place the still warm asparagus on serving plates and slide the fried eggs on top. - Delicious finishing:
Sprinkle with grated Parmesan, add a pinch of salt, and complete by pouring some hot melted butter over each serving.
