🍪 Biscutin de Prost: Original Recipe of the Traditional Cookies from Prosto di Piuro
Have you ever tasted the famous Biscutin de Prost? Crispy, buttery, and with a unique flavor, these typical Valtellinese cookies are a real delight that melts in your mouth 😍. Born over a century ago in Prosto di Piuro (SO), they were prepared at home for the Feast of the Assumption on August 15 and baked in the ancient oven “Al Mulino” of the Del Curto family, which still treasures the original recipe. A sweet from tradition that smells of history, celebration, and mountains.
📝 Ingredients:
- 1 kg of flour
- 500 g of sugar
- 600 g of cold butter, cubed
- A pinch of salt
- + 20 g of butter and flour (for the baking tray)
👨🍳 Procedure:
- Sift the flour twice with a pinch of salt directly onto the work surface.
- Distribute the sugar and cold, cubed butter over the flour.
- Start working the dough with two spatulas, without warming it too much with your hands.
- Form a block, wrap it in plastic wrap, and refrigerate for 1 hour.
- Take the dough out, work it briefly, and form strips about 4 cm in diameter.
- Cut regular slices about 1.5 cm thick and place them on a buttered and floured baking tray.
- Bake in a static oven at 220°C until golden brown.
