🍪 Soft Cookies Rolled in Sugar: Easy and Customizable Recipe

Do you want to prepare soft and fragrant cookies, perfect for enjoying at breakfast or with a cup of tea? This recipe is just what you need! The cookies rolled in sugar are super easy to make, soft on the inside and slightly crispy on the outside thanks to the double coating of granulated sugar and powdered sugar ✨. You can customize them with your favorite flavor: coffee, lemon, alchermes… or whatever inspires you most! 😍

📝 Ingredients:

  • 300 g of flour 00
  • 30 g of potato starch
  • 80 g of soft butter
  • 100 g of sugar
  • 1 packet of baking powder for desserts
  • 1 egg
  • 1 pinch of salt
  • 1 small cup of strong coffee (or lemon juice, alchermes, or any other flavor to taste)
  • Granulated sugar (for decoration)
  • Powdered sugar (for decoration)

👩‍🍳 Procedure:

  1. Take the butter and egg out of the refrigerator at least 1 hour before starting.
  2. In a bowl, mix the butter, sugar, and salt with a wooden spoon (or in a stand mixer with the paddle attachment) until you obtain a homogeneous cream.
  3. Add the whole egg and continue to blend.
  4. Pour into the bowl the chosen flavor (coffee, lemon, alchermes…) and mix it well.
  5. Add the sifted flour, potato starch, and baking powder, mixing until you achieve a compact dough.
  6. Wrap the dough and let it rest in the refrigerator for at least 1 hour.
  7. Form balls the size of a walnut, first pass them in granulated sugar, then in powdered sugar.
  8. Place the cookies on a baking tray lined with parchment paper, well spaced apart.
  9. Bake in a preheated oven at 180°C for 10–12 minutes. The cookies should remain soft in the center.
