🛒 Ingredients for 4 people
For the main dish:
- 4 veal fillet medallions (120 g each)
- 100 g of yellow mushrooms, already sautéed
- 150 g of Scimudin
- 4 zucchini flowers
- 50 g of liquid cream
- Salt, pepper, extra virgin olive oil, butter to taste
- Veal broth (optional for garnish)
For the batter:
- 100 g of all-purpose flour
- Cold sparkling water to taste
- 1 tablespoon of olive oil
- A pinch of salt
- Peanut oil for frying
👩🍳 Preparation
1. Prepare the Scimudin cream
- In a saucepan, dissolve the Scimudin in pieces with the liquid cream, stirring until you achieve a smooth and velvety cream. Keep warm.
2. Cook the medallions
- In a skillet, heat oil and a knob of butter, then sauté the veal medallions for 3 minutes on each side.
- Season with salt and pepper to taste.
3. Prepare the batter
- In a bowl, whisk together the flour, oil, salt, and very cold sparkling water until you obtain a fluid but not too runny mixture.
- Keep the batter on ice to keep it cool.
4. Fry the zucchini flowers
- Dip the zucchini flowers into the batter, allow to drain slightly and fry in peanut oil at 170°C until golden.
- Drain on absorbent paper.
🍽️ Plating
- Pour a veil of Scimudin cream in the center of the plate.
- Place the veal fillet on top and complete with the sautéed yellow mushrooms.
- Garnish with the fried zucchini flowers and a drizzle of warm veal broth.
