1. Preparing the pumpkin
- Clean the pumpkin by removing the skin and fibers, then cut it into slices about 1 cm thick.
- Arrange them on a baking sheet lined with parchment paper, cover with another sheet, and bake at 180ยฐC for 20 minutes.
- Let it cool slightly, then mash it with a potato ricer or fork.
2. Preparing the dough
- On a floured work surface, create a well with the flour, add the pumpkin puree, and begin to mix.
- Add the egg and continue to knead until you obtain a soft but not sticky dough.
- If necessary, add flour in moderation: too much will mask the delicate flavor of the pumpkin.
3. Shaping the gnocchi
- Form ropes and cut them into pieces the size of a hazelnut.
- Lightly flour them with flour and semolina, covering them with a cloth while you work.
4. Cooking and seasoning
- Cook the gnocchi in plenty of boiling salted water: they will be ready when they float to the surface (about 3 minutes).
- Drain them with a slotted spoon and transfer them to a pan with melted butter and sage leaves.
