Introduction
The ricotta and coconut balls are cold and super easy treats, ideal to prepare in no time, without using the oven.
Sweet, soft, and light, they are made with just 3 ingredients and are perfect for any occasion: snacks, buffets, as a dessert, or to offer to guests at the last minute.
With a cocoa variant and the addition of chocolate chips or dried fruit, you can customize them in a delicious and original way. 😍
📝 Ingredients (for about 15-18 balls)
- 250 g of well-drained cow's ricotta
- 130 g of coconut flour (plus some for coating)
- 80 g of granulated or powdered sugar
Variations:
- 20 g of unsweetened cocoa powder (for the chocolate version)
- Chocolate chips (a great idea to recycle Easter eggs)
- Chopped hazelnuts, pistachios, or almonds
👩🍳 Step-by-step Preparation
- In a bowl, mix the ricotta with the sugar well until you obtain a homogeneous and creamy mixture.
- Add the coconut flour and combine. If the mixture is too soft, add a bit more coconut.
- If necessary, let it rest in the fridge for 30 minutes to firm up the dough.
- Form balls the size of a walnut with your hands.
- Roll them in the remaining coconut flour to coat.
- Place the balls on a plate or tray and keep in the refrigerator until serving time.
For the chocolate version 🍫:
- Add 20 g of unsweetened cocoa to the dough before forming the balls.
- Alternatively, divide the dough and flavor only half for a mix of tastes and colors.
