๐Ÿ“ Ingredients for 4 people

For the pastry cream:

  • 125 g of whole milk
  • 20 g of egg yolk
  • 25 g of sugar
  • 10 g of cornstarch
  • A pinch of vanillin

For the semifreddo:

  • 15 g of egg whites
  • 30 g of sugar
  • 50 g of pastry cream
  • 10 g of Amaro Braulio Riserva
  • 100 g of whipped cream (well whipped)

For garnish:

  • Pastry cream
  • Fresh berries
  • Thin apple slices
  • (optional) Dark chocolate shavings

๐Ÿ‘จโ€๐Ÿณ Preparation

1. Prepare the pastry cream

  • Bring the milk to a boil in a saucepan.
  • In another pot, mix the egg yolk with the sugar, then add the cornstarch and a pinch of vanillin.
  • Pour the boiling milk over the yolk mixture, stirring.
  • Return to the heat and cook while stirring until you achieve the desired consistency.

2. Prepare the semifreddo

  • Whip the egg whites with the sugar until stiff.
  • In another bowl, mix the Braulio Riserva with the pastry cream.
  • Combine the mixture with the whipped egg whites, gently folding from the bottom up.
  • Add the whipped cream, always with gentle movements, so as not to deflate the mixture.

3. Freezing

  • Pour the mixture into single-serving aluminum molds.
  • Place in the freezer for at least 3-4 hours.

4. Plating

  • Unmold the semifreddos onto the plates.
  • Pour a spoonful of pastry cream as a base.
  • Garnish with fresh berries and apple slices, or with dark chocolate shavings for an even more indulgent alternative.
