🧀 Stuffed Chicken Supreme with Casera, Peppers, Vegetables, Buttered Potatoes
A second course that unites Valtellinese tradition and refinement! The stuffed chicken supreme with Casera DOP cheese and peppers, accompanied by buttered potatoes and crunchy vegetables, is a perfect recipe to impress guests with an explosion of genuine flavors and mountain aromas. 🇮🇹🍴
🛒 Ingredients for 6 people
➤ For the supreme:
- 4 small chicken breasts
- 200 g of young Casera cheese
- 4 slices of yellow pepper (peeled)
- Aromatic herbs (rosemary, thyme)
- Salt and pepper to taste
- Extra virgin olive oil
➤ For the cream:
- 1 red pepper
- A little onion
- Extra virgin olive oil
- Salt to taste
➤ For the side dish:
- 2 medium potatoes
- 1 carrot
- 1 large zucchini
- Butter to taste
- Salt to taste
👨🍳 Preparation
🔹 1. Red Pepper Cream
- Cut the red pepper into pieces and sauté it with a little oil and onion.
- Cook for 5 minutes, then blend and strain to obtain a smooth cream.
- Adjust with salt.
🔹 2. Preparation of the supreme
- Create a pocket in the chicken breasts.
- Insert the Casera in strips, the peeled yellow pepper, and the chopped herbs.
- Seal the breasts in foil.
- Cook in a static oven at 180°C for 15 minutes.
🔹 3. Preparation of the side dish
- Potatoes: cut them into wedges, cook them in the oven seasoned with butter and a pinch of salt until golden.
- Carrots and Zucchini: use a melon baller to make "pearls" or cut them into julienne, blanch in salted water for a few minutes. Immediately cool in ice water to keep them crunchy and colorful.
🍽 Plating
- Cut the chicken into diamonds.
- Arrange in a fan shape on the plate.
- Add buttered potatoes and vegetables.
- Decorate with the red pepper cream in a mirror effect or in drops.
- Serve immediately hot to enhance the aromas and softness of the melted Casera 🤩
