The carrot and almond cake with orange is very easy to prepare! 

A delight with a fresh and natural flavor, perfect for breakfast, a snack, or even as a light dessert. 🍊🥕

Thanks to the presence of fresh carrots and orange juice, these cakes turn out moist just right and are loved by both adults and children. You should try them too, perhaps in mini muffin version: they'll disappear in no time!

📝 Ingredients (for about 12 cakes)

  • 170 g of fresh carrots (preferably with green tops and bright color)
  • 140 g of flour 00
  • 140 g of powdered sugar
  • 70 g of almond flour (or peeled almonds to be chopped)
  • 60 g of orange juice
  • 40 g of seed oil
  • 15 g of butter (or the same amount of oil)
  • 2 eggs
  • Grated zest of 1 untreated orange
  • 1 pinch of salt
  • 12 g of baking powder

👩‍🍳 Method

  1. Prepare the carrots: peel and grate them finely or chop them in a blender. Add the melted butter, oil, and orange juice. Blend until you obtain a fine puree.
  2. Beat the eggs with the sugar and orange zest until you get a light and frothy mixture.
  3. Add the almond flour, the carrot puree, then the flour 00, baking powder, and salt. Mix the mixture well.
  4. Pour the batter into the buttered molds, leaving 2-3 mm from the edge.
  5. Bake in a static oven at 180°C for 16-18 minutes (maximum 20). Do the toothpick test: it should come out dry but not overcooked!

💡 Tip: you can enrich them with a lemon glaze or a dusting of powdered sugar. Great even the next day!
