📝 Ingredients for 4 people:
- 320 g of aged Valtellina Casera DOP
- 16 slices of speck
- 1 zucchini
- 1 potato
- 1 carrot
(all of medium size) - Extra virgin olive oil to taste
- Salt to taste
👩🍳 Step-by-step preparation:
- Cut the Valtellina Casera DOP into regular sticks.
- Wrap each stick with a slice of speck, forming rolls.
- Wash and cut the vegetables (zucchini, potato, and carrot) into matchstick pieces.
- Blanch the vegetables in salted water for a few seconds, then cool them immediately in ice water to keep them crunchy.
- Bake the rolls of Valtellina Casera and speck for a few minutes, until the speck is crispy and the cheese is slightly melted.
- Sauté the vegetables in a pan with a drizzle of extra virgin olive oil.
- Plate by arranging the vegetables as a base and place the Valtellina Casera DOP sticks wrapped in speck on top.
