🧀 Bignole with Casera DOP: Fried and Crispy Valtellinese Recipe
Have you ever tasted the savory bignole with Casera DOP cheese? A delightful dish rich in tradition, perfect for impressing with an appetizer from the Alpine heart! These crispy fried balls on the outside and soft on the inside are made with the typical cheese of Valtellina, Casera DOP, and represent an authentic mountain delight. 🍽️✨
📝 Ingredients for about 4 people:
- 75 g of white flour
- 75 g of fine buckwheat flour
- 250 cl of milk
- 60 g of butter
- 4 eggs
- 150 g of coarsely grated Casera DOP cheese
- Salt to taste
- Pepper to taste
- Oil for frying to taste
- Mixed salad greens (to serve)
- Red wine vinegar, extra virgin olive oil (for the emulsion)
👩🍳 Preparation:
- In a saucepan, bring the milk to a boil with a pinch of salt and the butter cut into pieces.
- Add the two mixed flours all at once and cook over low heat, stirring vigorously with a wooden spoon until you obtain a smooth and compact dough that pulls away from the sides.
- Let the mixture cool, then incorporate the eggs one by one, stirring vigorously until fully absorbed.
- Add pepper to taste and incorporate the coarsely grated Casera DOP cheese.
- Heat the oil in a pot to about 160°C. Using a spoon, form small balls and fry until they are golden brown and have tripled in volume.
- Drain on absorbent paper and serve the bignole on a bed of fresh salad greens.
- Season the dish with an emulsion of extra virgin olive oil, red wine vinegar, and a pinch of salt.

The Casera cheese is exclusively produced in Valtellina (SO), with milk from cows fed on Alpine herbs. The flavor varies in intensity depending on maturation, ranging from a white and soft texture to a more compact and yellow one. With its unmistakable aroma, it is now recognized as a product with Protected Designation of Origin (DOP).
