🧀 Savory Cookies with Gorgonzola and Walnuts: Rustic and Tasty Recipe

Looking for an original idea for an appetizer or a different kind of aperitif? Try these savory cookies with gorgonzola and walnuts, perfect for surprising your guests with a strong flavor and a crumbly texture 😋. Easy to prepare, these little cookies are inspired by savoury shortcrust pastry and are also great as buffet snacks or homemade gift ideas!

📝 Ingredients:

  • 100 g of coarsely chopped walnuts
  • 90 g of flour
  • The tip of a teaspoon of baking powder
  • 40 g of soft butter
  • 100 g of gorgonzola
  • Salt and pepper to taste

👩‍🍳 Procedure:

  1. In a bowl, mix flour, baking powder, and walnuts, setting aside a handful for final decoration.
  2. Add the soft butter, the crumbled gorgonzola, a pinch of salt and pepper.
  3. Start mixing with a fork, then continue with your hands until you obtain a homogeneous mixture.
  4. Transfer the dough to the work surface and finish working it as if it were shortcrust pastry.
  5. Form a salamander, slightly flattening the two ends.
  6. Wrap it in plastic wrap and place it in the freezer for 15–30 minutes.
  7. Prepare a baking tray with parchment paper.
  8. After the resting time, cut the salamander into slices about 0.5 cm thick.
  9. Roll the edges of the slices in the reserved walnuts and place the cookies on the baking tray, leaving some space between each.
  10. Bake in a preheated static oven at 180°C for 12–15 minutes.
