🧀 Parmesan Savory Cookies: Perfect Recipe for Appetizers and Buffets

Are you looking for a tasty recipe for an appetizer or a different kind of aperitif? Try these parmesan savory cookies, crumbly and flavorful, ideal to serve plain or filled with cheese spreads or sweet and sour jams 🥂. Perfect also as a base for a savory pie, they are prepared in a few steps and with genuine ingredients. A versatile and original proposal by Tempo di Ricette di Angela.

📝 Ingredients:

  • 300–310 g of flour
  • 150 g of soft butter
  • 50 g of grated parmesan
  • 2 egg yolks + 1 whole egg
  • 1 pinch of salt
  • ½ teaspoon of baking powder (non-vanilla)

👩‍🍳 Procedure:

  1. Beat the soft butter with parmesan and salt using the whisk for a few minutes, until you achieve a soft cream.
  2. Still using the whisk, add the eggs one at a time, waiting for the first to be well absorbed before adding the next.
  3. Combine the sifted flour with the baking powder, then transfer the dough to the work surface and briefly knead by hand until you obtain a compact dough.
  4. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes.
  5. Roll out the dough between two sheets of baking paper and cut out circles with a round cookie cutter or the rim of a liquor glass.
  6. Place the cookies on a baking tray lined with baking paper and bake in a preheated oven at 180°C for about 12 minutes.
    • For savory pies, bake the same dough at 180°C for 35-40 minutes.

💡 Filling Idea (optional):

Once cooled, you can fill the cookies by joining them two by two with:

  • A ricotta and spreadable cheese cream, flavored with salt and pepper
  • Or with sweet and sour jams to pair with cheeses

For an extra touch, roll the edges in hazelnut granules!
