An original and refined appetizer, perfect to impress with taste and creativity: crunchy baskets made with grana and buckwheat, filled with Bresaola della Valtellina, Bitto cheese and celeriac, all served on a bed of fresh greens ๐Ÿฅฌโœจ. Crunchiness, savoriness, and freshness in one dish!

๐Ÿ“ Ingredients for 4 people:

For the filling:

  • 120 g of Bresaola della Valtellina
  • 120 g of Bitto cheese
  • 80 g of celeriac
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • Lemon juice to taste

For the baskets:

  • 100 g of grated grana
  • 30 g of coarse buckwheat flour

๐Ÿ‘‰ 1. Preparation of the wafers:

Pan method:

  1. Heat a non-stick pan.
  2. Sprinkle the bottom with a handful of grated grana and a bit of buckwheat flour.
  3. When the wafer starts to brown, gently remove it and place it on an inverted bowl, shaping it quickly while it's hot to achieve the basket shape.

Microwave method:

  1. On a sheet of parchment paper, place a handful of grana and buckwheat flour.
  2. Cook in the microwave until golden and proceed the same way to form the baskets.

๐Ÿ‘‰ 2. Preparation of the filling:

  1. Cut the bresaola, Bitto, and celeriac into thin strips.
  2. Combine everything in a bowl and season with extra virgin olive oil, lemon juice, salt, and pepper.

  1. Place a bed of fresh greens on the serving plate.
  2. Fill each crunchy basket with the prepared filling.
  3. Serve immediately to maintain the crispness of the wafer.
