๐ง Crunchy Baskets with Bresaola, Bitto and Celeriac
An original and refined appetizer, perfect to impress with taste and creativity: crunchy baskets made with grana and buckwheat, filled with Bresaola della Valtellina, Bitto cheese and celeriac, all served on a bed of fresh greens ๐ฅฌโจ. Crunchiness, savoriness, and freshness in one dish!
๐ Ingredients for 4 people:
For the filling:
- 120 g of Bresaola della Valtellina
- 120 g of Bitto cheese
- 80 g of celeriac
- Extra virgin olive oil to taste
- Salt and pepper to taste
- Lemon juice to taste
For the baskets:
- 100 g of grated grana
- 30 g of coarse buckwheat flour

๐ 1. Preparation of the wafers:
Pan method:
- Heat a non-stick pan.
- Sprinkle the bottom with a handful of grated grana and a bit of buckwheat flour.
- When the wafer starts to brown, gently remove it and place it on an inverted bowl, shaping it quickly while it's hot to achieve the basket shape.
Microwave method:
- On a sheet of parchment paper, place a handful of grana and buckwheat flour.
- Cook in the microwave until golden and proceed the same way to form the baskets.
๐ 2. Preparation of the filling:
- Cut the bresaola, Bitto, and celeriac into thin strips.
- Combine everything in a bowl and season with extra virgin olive oil, lemon juice, salt, and pepper.
๐ 3. Plating:
- Place a bed of fresh greens on the serving plate.
- Fill each crunchy basket with the prepared filling.
- Serve immediately to maintain the crispness of the wafer.
