📝 Ingredients for 1 portion:
- 50 g of young Valtellina Casera DOP
- 50 g of turnip tops
- 50 g of fresh cream
- 10 g of butter
- 50 g of sausage
- 1 egg yolk
- Smoked paprika to taste
- Salt and pepper to taste
👨🍳 Preparation:
👉 1. Creamy base:
- In a bowl, whisk the egg yolk with the cream, adjust with salt, and add a pinch of smoked paprika.
- In a pan, melt the butter and sauté the turnip tops, adding a little water to soften them.
- Adjust with salt and pepper.
- Blend the turnip tops, adding a bit of cooking water to achieve a smooth consistency.
- Combine the cream with the egg yolk into the vegetable cream and mix well.
👉 2. Cooking the cream:
- Pour the cream into a deep plate or a suitable baking dish.
- Cook:
- in steam at 85°C for 15 minutes, or
- in a water bath at 160°C for 40 minutes.
👉 3. Preparation of the seasoning:
- Cut the sausage into chunks and brown it in a pan with a knob of butter until golden.
- In another pan, brown the cubes of Valtellina Casera DOP until crispy.
👉 4. Composition of the dish:
- Once the cream is cooked, remove it from the oven or steam.
- Garnish with chunks of sausage and golden cubes of Casera.
