Valtellinese Cupèta: traditional sweet with honey, walnuts and biscuits 🍯🌰
Once found only in November, during local fairs, like the one of S. Andrea a Chiuro. Today, the valtellinese cupèta, a rich and nourishing sweet, is available all year round, but its aroma of honey and walnuts immediately brings us back to the authentic atmospheres of past festivals. 🥰
With its compact and very sweet dough, made from honey, sugar, walnut kernels and biscuits, just one small square is enough to fill up on energy! It’s certainly not a light sweet, but it’s perfect as a tasty snack on cold days or as a treat to enjoy with friends and family 🍬💪
🛒 Ingredients
- 300 g of multiflower honey from Valtellina
- 300 g of sugar
- 300 g of walnut kernels, coarsely chopped
- 100 g of crumbled dry biscuits
- 10 g of grated bread
- 2 sheets of edible wafer
👩🍳 Preparation
- In a large pot, heat the honey and sugar over low heat, stirring continuously and skimming off the foam that forms on the surface each time.
- When the mixture becomes thick and caramelized, remove from the heat.
- Immediately add the walnut kernels, the crumbled biscuits and the grated bread.
- Mix carefully until you obtain a homogeneous and thick dough.
- Pour the mixture onto a wafer sheet placed on a flat surface and level it well with a spoon.
- Cover with the second wafer sheet and press lightly with a rolling pin, until you achieve a thickness of about half a centimeter.
- Let it cool and then cut into squares of about 5–6 cm or into your preferred shapes.
