Focaccia di Godona (Fughiascia de Gurduna) 🫓🔥 | Typical recipe from Valchiavenna

The Focaccia di Godona, or Fughiascia de Gurduna, is a true gastronomic rarity that can be found only in the village of Gordona, in the province of Sondrio. It is a humble yet rich in history preparation, passed down from generation to generation, made with simple ingredients such as white flour, corn flour, and cooked polenta. 🌽🍞

What is its peculiarity? The vertical cooking over an open flame, once done on hot stone slabs, which gives the focaccia a crispy crust and a unique aroma. Today it can also be prepared in the oven, but always with the spirit of the Valtellinese tradition. A rustic dish to enjoy with local cold cuts and cheeses, ideal to serve hot and freshly baked 🧈🥓

🛒 Ingredients for 8 people

  • 250 g of local yellow corn flour (also mixed with buckwheat)
  • 500 g of white flour 00
  • 2 tablespoons of extra virgin olive oil (or lard)
  • 100 g of milk at room temperature
  • 50 g of brewer's yeast
  • 1 teaspoon of salt
  • 1 pinch of sugar

👩‍🍳 Preparation

  1. In a small pot, cook the yellow flour with salted hot water for about 5 minutes, until you obtain a consistency similar to semolina.
  2. Transfer the still warm polenta to a large bowl, add the milk, the yeast, the salt, the oil (or lard), and the sugar, mixing well.
  3. Add the white flour and knead vigorously until you obtain a elastic and homogeneous mixture.
  4. Form a ball, grease the surface, and let it rise in a covered container for at least 2 hours.
  5. After the time has passed, roll out the dough on a baking tray lined with parchment paper. Using a fork, create a crosshatch pattern on the surface.
  6. Bake in a preheated oven at 200°C for 25-30 minutes.
  7. Once out of the oven, rub the surface with butter and serve hot, accompanied by cheeses, lard, salami, pancetta, or raw ham. 🧀🥩
