- 100 g of 00 flour
- 70 g of cow's ricotta (well drained)
- 60 ml of whole milk
- 20 g of grated parmesan
- 1 egg (medium)
- 15 ml of seed oil
- 8 g of instant yeast for savory cakes (about half a packet)
- 80 g of zucchini
- 50 g of Bresaola della Valtellina IGP
- Salt and pepper to taste
👩🍳 Step-by-step Preparation
- Grate the zucchini with a large-holed grater.
- Wrap them in a rectangle of parchment paper, let them rest for a few minutes, then make holes and gently squeeze to remove excess water.
- Cut the Bresaola della Valtellina IGP into strips and set aside a bit for the final decoration.
- In a bowl, beat the egg with the milk, oil, a pinch of salt, and pepper with a whisk.
- Add the drained ricotta, then mix in the flour, yeast, and parmesan.
- Combine everything with a spatula, then add the grated zucchini and the bresaola strips.
- Prepare the muffin molds with paper liners and pour the batter inside using a spoon or a piping bag.
- Decorate the surface with some strips of zucchini and bresaola.
- Bake in a preheated static oven at 180°C for about 22 minutes, until golden.
