📝 Ingredients (for about 12-14 balls)

  • 200 g of cow's ricotta (well-drained)
  • 70 g of grated Parmesan
  • Salt, black pepper to taste
  • A pinch of nutmeg
  • Chopped herbs to taste (e.g. parsley, chives, thyme)

Ideas for coating:

  • Sesame seeds, cumin, poppy seeds
  • Chili powder, sweet or smoked paprika
  • Nut or pistachio crumbs

👩‍🍳 Step-by-step preparation

  1. In a bowl, mix the well-drained ricotta with the grated Parmesan until you get a homogeneous mixture.
  2. Add salt, a sprinkle of black pepper, a pinch of nutmeg, and if desired, chopped aromatic herbs.
  3. If the mixture is too soft, let it rest in the refrigerator for 20-30 minutes.
  4. Form balls the size of a walnut.
  5. Roll each ball in your preferred coating: seeds, spices, dried fruit crumbs, fresh herbs, etc.
  6. Place them on a tray and serve them cold. You can also prepare them in advance and store them in the fridge.
