- 400 g of young Valtellina Casera DOP
- 80 g of finest corn flour or precooked yellow flour
- 5 g of minced sage and rosemary
- 50 g of white bread crumbs (grated)
- 40 g of 00 white flour
- 2 eggs
- 4 fresh artichokes
- Extra virgin olive oil to taste.

- Clean the artichokes by removing the tougher outer leaves, and cut them into thin wedges.
- Sauté them in a pan with a drizzle of extra virgin oil for a few minutes, keeping them crispy.
- Cut the Casera DOP into cubes or rectangles, in the desired shape.
- Dip each piece first in white flour, then in beaten egg, and finally coat it in a breading made of:
- corn flour
- grated white bread crumbs
- minced sage and rosemary
- Fry it in hot oil, turning until you achieve a crispy and golden breading.
- Drain on paper towels to remove excess oil.
