The young Valtellina Casera DOP, cut and breaded in a fragrant mixture of corn flour, bread, and aromatic herbs, is golden fried in a pan and served with sautéed artichokes, still crispy. 📝 Ingredients for 4 people

  • 400 g of young Valtellina Casera DOP
  • 80 g of finest corn flour or precooked yellow flour
  • 5 g of minced sage and rosemary
  • 50 g of white bread crumbs (grated)
  • 40 g of 00 white flour
  • 2 eggs
  • 4 fresh artichokes
  • Extra virgin olive oil to taste.

👩‍🍳 Step-by-step Preparation

  1. Clean the artichokes by removing the tougher outer leaves, and cut them into thin wedges.
  2. Sauté them in a pan with a drizzle of extra virgin oil for a few minutes, keeping them crispy.
  3. Cut the Casera DOP into cubes or rectangles, in the desired shape.
  4. Dip each piece first in white flour, then in beaten egg, and finally coat it in a breading made of:
    • corn flour
    • grated white bread crumbs
    • minced sage and rosemary
  5. Fry it in hot oil, turning until you achieve a crispy and golden breading.
  6. Drain on paper towels to remove excess oil.
  7. Serve the cheese cubes hot, accompanied by the crispy sautéed artichokes.
