🥗 Mixed Vegetable Giardiniera in Preserve: Easy and Flavorful Recipe
If you are looking for a delicious idea to preserve summer vegetables and have them ready for your appetizers or side dishes, this recipe for pickled vegetable appetizer is a timeless classic, perfect for accompanying cold dishes, cold cuts, and cheeses or even just good bread.
📝 Ingredients for about 4-5 jars
- 2 kg of ripe tomatoes
- 1.2 kg of mixed vegetables, such as:
- bell peppers
- carrots
- green beans
- onions
- cucumbers
- zucchini
- celery
- 1 tablespoon of fine salt
- 2 tablespoons of sugar
- 1 glass of extra virgin olive oil
- ½ glass of white wine vinegar
👩🍳 Preparation of the preserved vegetable appetizer
- Blanch the tomatoes after peeling them, cook them in a pan for about 15 minutes. Then blend them with an immersion blender or mash them well with a fork until you obtain a smooth sauce.
- Put the pot back on the heat and add carrots, green beans, and celery, cut into pieces. Cook for 10 minutes.
- Now add the rest of the chopped vegetables (bell peppers, onions, zucchini, cucumbers), along with salt, sugar, oil, and vinegar. Mix well and continue cooking for another 10 minutes.
- Let cool directly in the pot, then pour the appetizer into sterilized, clean, and perfectly dry jars, sealing them well with new caps.
- Place the jars in a large pot for sterilization: wrap them in clean dishcloths to prevent them from touching each other, cover them with cold water, and bring to a boil.
- Once boiling, calculate 10 minutes, then turn off the heat and leave the jars immersed in the water until completely cool.
If you used standard jars like “Quattro Stagioni” with metal caps, you will notice a slight depression in the center of the lid: this indicates that the vacuum has been properly formed.

Store the jars in a cool, dry place: they will last for months. Great to serve as a cold ratatouille, tasty side dish, or rustic appetizer for your summer and autumn gatherings.
