📝 Ingredients (for 4 people)

  • 4 goat cheeses of 100 g
  • 200 g of mixed greens (mesclun, arugula, chicory, valerian)
  • 2 slices of sliced bread
  • 40 g of Grana Grosino grated
  • 4 cherry tomatoes
  • Extra virgin olive oil to taste
  • Balsamic vinegar to taste
  • Salt to taste

👩‍🍳 Step-by-step preparation

  1. Wash and thoroughly dry the mixed greens.
  2. Cut the sliced bread into cubes and sauté it in a pan with a drizzle of oil until golden croutons are obtained.
  3. Cut the goat cheese maintaining a thickness of about 1.5 cm for each slice.
  4. Place the goat cheese on a baking tray lined with parchment paper, sprinkle with Grana Grosino and broil until golden.
  5. Meanwhile, cut the cherry tomatoes into wedges.
  6. Compose the plates: create a base with the greens, add the croutons, the cherry tomatoes, a pinch of salt, EVO oil, and a few drops of balsamic vinegar.
  7. Place the baked goat cheese on top and serve immediately, still warm.

💡 Extra tips

  • If you want a more intense flavor, you can add chopped walnuts or toasted seeds.
