This light salad with Bresaola from Valtellina, Casera cheese, and walnuts is perfect for a balanced and quick summer lunch. It can be prepared in just a few minutes, requires no cooking, and can easily be customized with whatever you have in the fridge. A healthy, fresh, and truly delicious choice! 😋

📝 Ingredients (for 4 people)

  • Arugula, or lamb’s lettuce or small chicory to taste
  • 200 g of Bresaola della Valtellina IGP, sliced into julienne
  • Cherry tomatoes (to taste, whole or halved)
  • 50 g of shelled walnuts
  • 150 g of Casera Cheese DOP, cut into cubes
  • Extra virgin olive oil to taste
  • Lemon juice or balsamic vinegar, to taste
  • Salt and pepper to taste (optional)

👩‍🍳 Step-by-step Preparation

  1. Wash and dry the chosen salad, then place it in a large bowl.
  2. Add the cherry tomatoes, whole or halved.
  3. Combine the julienned Bresaola, shelled walnuts, and cubed Casera cheese.
  4. Dress with extra virgin olive oil and, if you like, a few drops of fresh lemon or balsamic vinegar.
  5. Gently mix and serve immediately to keep all the freshness of the dish.
