📝 Ingredients (for 4 people)
- 200 g of mixed salads (spumiglia, songino, lollo, valeriana, wild arugula)
- 150 g of aged Valtellina Casera DOP
- 8 slices of bacon
- 8 small cherry tomatoes
- 4 fresh mushrooms (cultivated or porcini)
- 16 walnut halves
- 8 slices of rye bread, cut into cubes
- 1 green apple
- Extra virgin olive oil to taste
- Red wine vinegar to taste
- Salt to taste
👩🍳 Step-by-step Preparation
- Wash and dry the mixed salads thoroughly.
- In a non-stick pan, sauté the bacon until crispy, then set it aside.
- In the same pan, toast the cubes of rye bread until golden and crispy.
- Cut the cherry tomatoes into wedges and the Valtellina Casera DOP into thin sticks.
- Thinly slice the fresh mushrooms (preferably porcini).
- Cut the green apple into matchsticks without peeling it.
- On a serving plate or in individual bowls, assemble the salad by arranging: the mixed salads, cherry tomatoes, toasted bread, bacon, mushrooms, cheese, walnuts, and apple.
- Dress with an emulsion made by mixing extra virgin olive oil, red wine vinegar, and salt.
