Ideal for a complete, light yet nutritious lunch, it is also perfect as a main dish on warmer days. Every ingredient, from rye bread to the matchstick-cut apple, is chosen to provide an authentic and satisfying taste experience. 😋

📝 Ingredients (for 4 people)

  • 200 g of mixed salads (spumiglia, songino, lollo, valeriana, wild arugula)
  • 150 g of aged Valtellina Casera DOP
  • 8 slices of bacon
  • 8 small cherry tomatoes
  • 4 fresh mushrooms (cultivated or porcini)
  • 16 walnut halves
  • 8 slices of rye bread, cut into cubes
  • 1 green apple
  • Extra virgin olive oil to taste
  • Red wine vinegar to taste
  • Salt to taste

👩‍🍳 Step-by-step Preparation

  1. Wash and dry the mixed salads thoroughly.
  2. In a non-stick pan, sauté the bacon until crispy, then set it aside.
  3. In the same pan, toast the cubes of rye bread until golden and crispy.
  4. Cut the cherry tomatoes into wedges and the Valtellina Casera DOP into thin sticks.
  5. Thinly slice the fresh mushrooms (preferably porcini).
  6. Cut the green apple into matchsticks without peeling it.
  7. On a serving plate or in individual bowls, assemble the salad by arranging: the mixed salads, cherry tomatoes, toasted bread, bacon, mushrooms, cheese, walnuts, and apple.
  8. Dress with an emulsion made by mixing extra virgin olive oil, red wine vinegar, and salt.
