- 4 thin slices of young Casera DOP

1. Cook the potatoes:
- Boil the potatoes with the skin in slightly salted water.
- Drain them at half cooking, peel them and let them cool.
2. Prepare the mixture:
- Grate the cooled potatoes and the aged Casera.
- In a pan, sauté the chopped onion with a drizzle of EVO oil.
- Combine everything in a bowl, mix well, and adjust with salt and pepper.
3. Cook the rösti:
- Heat a non-stick pan with a little oil.
