Ingredients:
Buckwheat 10.6oz Farina di grano saraceno Moro
White wheat flour 7.05oz
Casera cheese 10.06oz
Salt 1/2tsp
Sparkling water or beer
Schnapps 1Tbs
Fry oil or pig fat

With an egg beater, stir both flours with salt and schnapps, adding sparkling water until you rich a soft, flexible texture.

Now add the Casera cheese, diced in about 1 inch pieces.

Mix again everything and let it rest for about 2 hours to room temperature.

Heat up the oil and when it's really hot add a piece of cheese covered by batter (use a teaspoon and help everything dropping into the oil by a finger).

Let them golden a bit and when they come up to surface serve hot with chicory.
